Doc: you need a really rich single layer chocolate cake. Carefully cut out the center, leaving the bottom and aides intact. Save the cake pieces. Fill with pitted cherries that have soaked up a nice bit of alchol, pat on some of the cake pieces you removed to cover the cherries. Top it with a chocolate glaze or custard. Mmmm.

Honestly, alcoholic custard. It’s like a more liquid creme brulee but with brandy, and the crunchy sugar stirred in. I’ve got a recipe somewhere, I’ll dig it out.
